There may be a few posts today! I meant to post this one earlier today but got distracted and then hubby and I went to a Rockies/Pirates game. I was a bit conflicted since I grew up in the 'burgh but I live in Denver now. Ah, who am I kidding, I don't follow professional sports for real. It was fun, we got some sun and did get pretty sunburned.
This morning was really productive, I had errands to run so I left bright and early at 8:45 and hit up target to get new shoes since my feet are so swollen that I don't fit into any of my dress shoes. I found the last pair of slides in my size Win! Then I found the magazine that hubby is in, WIN! and finally I went to Whole Foods and asked around and found Chia Seeds, TRIPLE WIN!
Unfortunately, I spent so much time shopping and putting the chia fizz together that I had five minutes to make lunch before we went to the baseball game. I was not about to ruin my diet on overpriced and over salted and not awesome ballpark food, so I made a green monster to drink on the way. Today I left out the peanut butter and instead mixed the following ingredients:
- 1c. mango
- 1 banana
- 4 tbsp ground flax seed
- 1 tbsp chia seeds
- 1 c. spinach
- 1 c. nonfat milk
- 399 cals, 64 carbs, around 13 fiber, 14 fat, 19 protein
Overall, I loved it. However, I had HUGE mint leaves. The recipe called for 12 and I used 12. I have a feeling they meant 12 mini leaves, so there was (and is) altogether too much mint. I may add a wee bit more Agave next time too. I finished the mixture and there are still chia seeds ands juice in the mint leaves and lime so I added my tap water to it, and I'm on my second glass of mint water. yum! A great fresh summertime drink. It clocks in at 100 calories 15 g carbs 6 g fiber, 4 g fat 2 g protein. Not bad for a drink and that is a TON of fiber. I hit my fiber goal today without a fiber one bar. YAY!
