Meet my niece

Isn’t she the cutest? I’m so ready to spoil her! 

I kept getting distracted all day, but managed to get through the work day quickly enough.

I mixed things up for breakfast today and replaced my Mix 1 with Walnut Blueberry Banana Bread, I still had my bran buds and grapes.  Very fruity breakfast!

Lunch was the same as yesterday and the same as tomorrow. Salt & pepper chicken and Bulgur, Mint and Parsley salad. (check back tomorrow for the recipe!)
On Sunday night Dan and I made three cheese calzones.  I haven’t had a piece yet.  You should have seen us working with this dough.  We don’t own a rolling pin…kinda makes rolling dough hard!  We tried using some wine bottles but they didn’t work so well.  Look at how uneven these are except the one on the bottom right. Despite the trying issues with the dough and the uneven spread on the calzone it was pretty tasty! 

It’s also super easy to make.  Mix cheeses and spinach.  Put some salami down on the 8 inch dough, layer on the cheese and spinach mixture. Fold over the dough and pinch the edges.  Bake for like 15 minutes at 450 degrees.

I’m eating an Oatmeal-Banana Cookie as I’m typing this.  So tasty.   Today is my Thursday, we leave on Friday for Chicago for our friends’ wedding!
