Salt and pepper chicken


And here you go for the recipe from last night.  Also, I’m down .6 pounds from yesterday.  What an awesome week!

 

This recipe is an example of healthy eating being easy.

  • 1 T Olive oil
  • 1/2 t salt
  • 1/2 t pepper
  • 4 6 ounce boneless, skinless chicken breasts

 

Heat the olive oil in a skillet over medium-high heat.  Season the chicken with 1/2 t salt and 1/2 t pepper and cook until browned and cooked through, 6 minutes per side.  If it is not cooked at that point put it in the oven for 10 minutes or so.

 

For 8 3oz servings

  • Nutritionals: Calories: 143.5g, Fat: 3.1g, Sodium: 148mg, Protein: 27g

That does look tasty and easy - will definitely do that!

Paprika chicken is just chicken pieces (breast or thighs) browned with onion and garlic (lots) and red paprika powder (lots), then put into a casserole dish with some chicken stock. Cook for 40 mins, adding chopped up different coloured fresh pepper "rings" 10 mins before serving.
