Walnut Blueberry Banana Bread

Our first attempt at baking in Denver was with the Walnut Blueberry Banana Bread from the Sept./Oct. Clean Eating.  We have decided that this bread is fantastic right out of the fridge!  It was good that we made so much since Dan was able to fill up on three (200 calories per slice!) pieces this morning!

This recipe isn’t hard to make.  Basically you just have to combine ingredients and bake!

Start out by preheating the oven to 375 degrees.

In a large bowl, mix together 1 tsp baking soda, 1/2 t salt, 3/4 c spelt flour and 3/4 c whole-wheat flour.  IMG_2027_edited-1Add in a teaspoon of orange rind (pull out with a fork to make sure it’s not clumpy-the rind will want to stick together).    IMG_2050_edited-1

In a separate (larger) bowl, stir together 1 mashed banana.

2 egg whites.

3/4 c ground flaxseed meal

1 c buttermilk
IMG_2103 Add the dry ingredients to the wet ingredients.  Once it is combined, gently add 1 c. blueberries and

Pour the mixture into a loaf pan and bake for 45 minutes. IMG_2082_edited-1

Let bread cool and cut into 10 slices.
