
I will have to admit that I’ve never had Chicken Cordon Bleu before. Of course, I’m sure this statement will prompt my dad to remind me of a time I had it. So I’m sorry if I’m wrong! It’s fun that these blog posts are prompting my family to share more stories of my life growing up.
Quick Chicken Cordon Bleu
Ingredients:
- 4 chicken breasts
- 1/2 t pepper, divided
- 1/4 t salt
- 1/3 c shredded Gruyere cheese
- 2 T reduced fat cream cheese
- 1/4 c coarse dry whole-wheat breadcrumbs
- 1 T chopped fresh parsley
- 4 t EVOO
- 1/4 c ham
Instructions
- Preheat oven to 400
- Sprinkle chicken with 1/4 t pepper and salt. Combine cheese and cream cheese in a bowl.
- Combine the remaining 1/4 t pepper with breadcrumbs, parsley and 2 t oil in another bowl.
- Heat the remaining 2 t oil in a large, ovenproof nonstick skillet over medium heat
- Cook the chicken until browned on both sides. This should be about 2 minutes per side.
- Move the chicken to the center so all pieces are touching.
- Spread with the cheese mixture, sprinkle with ham, then top with the breadcrumb mixture.
- Bake until the chicken is no longer pink in the center. This should be about 7 minutes.
- Nutritionals: Cal: 275, Fat: 13, Carb: 4, Protein: 34, Fiber: 1.

I hate how good Chicken Cordon Blue looks, because it is made up of all things I dislike! But man, it looks GOOD!
AHHHH..... chicken cordon bleu (I believe it's bleu) is one of my FAVES!!! I've only had the 'real' fatty, unhealthy version but this looks so good. And the nutrition facts are awesome! Will try this one too!
I have a lower fat version of it too! I just leave off the ham which probably means it's not really chicken cordon bleu!?
