French Toast

This recipe is modified from Clean Eating and has become a favorite weekend treat.  I’m considering sprinkling some chia seeds on them next time to continue to up the fiber content.

Ingredients

  • 6 eggs
  • 1 c skim milk
  • 1/4 t cinnamon, ground
  • 1/4 t nutmeg, ground
  • 1 T EVOO
  • 12 slices whole wheat bread

 

Instructions

  • In a shallow bowl, combine egg whites, milk, cinnamon and nutmeg
  • Heat oil in a large nonstick skillet over medium heat. 
  • Make sure to mix up the egg mixture immediately before dipping in each side of the bread.
  • Place the bread on the skillet side by side for 3 to 5 minutes on each side.  Serve with syrup.

Nutritionals(2 pieces of bread-approx): Calories: 147, Fat: 3.5, Carb: 21, Fiber 2, Protein: 9.

That french toast is good enough for a magazine! Yum! I haven't made french toast in a long time.

That looks so good! I have a oatmeal pancake recipe from an old issue of Clean Eating that my boyfriend and I love to make! I can send it your way if your interested!
