Dan and I are both working on making sure we get a good amount of green vegetables into our diets and while we often resort to steaming the broccoli we decided to mix it up last week. It was really fun to taste the combination of lemon and garlic.
This recipe is one of the oldest ones in my cookbook. My mom gave me a Cooking Light magazine a few years ago (2003?) It was tasty!
Lemony Roasted Broccoli
Ingredients:
- 6 c broccoli
- 1 t grated lemon rind
- 2 t EVOO
- 1/4 t salt
- 1/8 t pepper
- 2 thinly sliced garlic cloves
Instructions:
- Preheat the oven to 425
- Combine all ingredients and spread out across a baking sheet
- Bake for 15 minutes

Yum! This reminds me of this Italian restaurant that was near my apartment when I lived in Brooklyn. All their veggies were served like this - delish!
