
This simple, but delicious recipe has been passed down through the generations in my family. These are still my most favorite pancakes that all other pancakes are compared with.
Ingredients:
- 2 c flour, sifted
- 1 t salt
- 1 t baking soda
- 1 T sugar
- 2 eggs, separated
- 2 c buttermilk
- 2 T oil
Instructions:
Sift the flour. Then sift together the sifted flour, salt, baking soda and sugar.
In a mixing bowl (or kitchenaid) beat egg whites until stiff. Then add the yolks. Fold in remaining ingredients. Cook on an electric griddle and make sure not to turn the heat too high.
These pancakes are best when made in silver dollar sized. Use two spoons to get the best size. Also, no matter what, resist the urge to smoosh the pancakes!
The final product should be tall pockets of airy deliciousness.

thank you so much for posting this!! I can hardly wait until Saturday to try them. Yum, yum, yum! Is there any harm in making them bigger?
I couldn't stop thinking about these once I saw your pictures! As I write this I'm again drooling over them. Anyway, I woke up yesterday morning...sprung out of bed really...to make these! ...unfortunately I was short on time so I took a few shortcuts. They still came out good, but I need to do it the right way next time (I didn't separate the egg or use buttermilk...ahh the failure!). I was sure not to smoosh them though! Thanks for posting the recipe I can't wait to try it for real =)
