Parmesan Chicken Breasts with Crispy Prosciutto


Last Monday was prosciutto day for me.  This was not the prettiest dish, it was really tasty.

Parmesan chicken breast with crispy ham

Ingredients:

  • 1 t dried thyme
  • 4 skinless chicken breast
  • pepper
  • 2 1/2 oz parmesan, grated
  • 5 slices of prosciutto
  • olive oil

Instructions:

Score the bottom of the chicken and season with a little pepper and most of the thyme.  Top each breast with the parmesan. 

 

Lay 1 slice of prosciutto over each breast.  Drizzle with olive oil and top with the rest of the thyme.  Cover with plastic and flatten with the bottom of a heavy pan.  Then remove the plastic.

Heat a frying pan over medium heat. Place the breasts in the pan with the prosciutto side down.  Drizzle some additional olive oil and cook for 5 minutes on each side.
