
While Dan’s favorite dessert is chocolate cheesecake, mine is yellow (or white) cake and fluffy white icing. There is nothing better. We spent our one year anniversary at my mom’s house and to celebrate she offered to make a a fancy dinner and my favorite cake.
We didn’t save the top layer of our wedding cake because we lived halfway across the country from where we got married and knew we wouldn’t be at home for our anniversary, so it didn’t make sense to transport it. So, we got a new cake! yay!
Cake Ingredients
- 2/3 c butter
- 1 3/4 c sugar
- 2 eggs
- 1 1/2 t vanilla
- 3 c sifted cake flour
- 2 1/2 t baking powder
- 1 t salt
- 1 1/4 c milk
Instructions:
Preheat oven to 350.
Cream butter. Add sugar gradually, creaming till light. Add eggs and vanilla and beat till fluffy. Sift dry ingredients together, add to creamed mixture alternately with milk, beating after each addition. Beat 1 minute.
Bake in 2 greased and lightly floured 9x 1 1/2 round pans. Bake for 30-35 minutes. Cool for 10 minutes and remove pan.
Icing Ingredients:
- 1 c granulated sugar
- 1/3c water
- 1/4t cream of tartar
- Dash of salt
- 2 egg whites
- 1 t vanilla
Instructions:
Bring sugar, water, cream of tartar and salt to a boil. Stir until the sugar dissolves. Add the syrup very slowly to two egg whites and beat constantly for seven minutes. Add 1 t vanilla.

But Amy! Desserts are the best part of working out! (that and chips/french fries) enjoy! I hope the wedding cake sunday is tasty....yes, I am already looking forward to that!
