Fig and PB Dough balls



I have been dreaming of these since Ashley gave us some at the CO blogger get together.  I made a few changes (oh how Ashley of me!) to up the fiber content.   Each one of these babies has 150 calories and 4 g of fiber.  Not to bad!  The figs add a perfect sweet combination with the salt of the peanut butter!

  • 3/4c peanuts
  • 2T maple syrup
  • 1/4c agave
  • 1/2c oats
  • 2T peanut butter
  • 1/4c ground flax meal
  • 1/2t cinnamon
  • 2 T Chia seeds
  • 6 dried figs

  1. Grind nuts in the food processor until they become fine crumbs.
  2. Add the rest of the ingredients and turn on, scrape the sides occasionally.

  1. The mixture will turn into a ball.  I threw the ball into the fridge overnight and rolled into balls in the morning.  The balls were crumbly but after some time in the fridge stayed together.
  2. Store in the fridge.

Nutritionals(For 24 balls and a serving size of 2): Calories: 150, Fat: 7, Carb: 21, Fiber: 4, Protein: 4
