
I have been dreaming of these since Ashley gave us some at the CO blogger get together. I made a few changes (oh how Ashley of me!) to up the fiber content. Each one of these babies has 150 calories and 4 g of fiber. Not to bad! The figs add a perfect sweet combination with the salt of the peanut butter!
Fig and PB Crunch Dough balls

- 3/4c peanuts
- 2T maple syrup
- 1/4c agave
- 1/2c oats
- 2T peanut butter
- 1/4c ground flax meal
- 1/2t cinnamon
- 2 T Chia seeds
- 6 dried figs
- Grind nuts in the food processor until they become fine crumbs.
- Add the rest of the ingredients and turn on, scrape the sides occasionally.
- The mixture will turn into a ball. I threw the ball into the fridge overnight and rolled into balls in the morning. The balls were crumbly but after some time in the fridge stayed together.
- Store in the fridge.
